There’s something undeniably magical about the smells that fill our homes (and cottages) - each scent a little whisper of comfort and joy. Whether it’s barbequing with friends or the warm, sugary aroma of freshly baked cookies or the earthy scent of a morning cup of coffee, these foods don’t just fill the air; they fill our hearts. They are reminders that life’s simplest moments in the kitchen are often the most meaningful memories and traditions.
At Hospice, Bob’s Kitchen keeps these memories alive, nourishing the hearts and souls of our guests all powered by the love of community volunteers. Thanks to the generous support of the Sweet Grass Fund, the prep kitchen at Hospice has been named after Bob McCaig. One of Bob’s many passions in life, was cooking in the kitchen for family & friends.

'cottage-time’ recipes!

Bob’s Chicken Cacciatore

When we were all working on a project such as yard cleanup or any day of activity, this was Bob’s go-to quick, satisfying and popular meal. His recipe calls for about 4 pounds of chicken parts (Bob preferred all thighs, with or without skin but it really doesn’t matter!)
  • Pat the chicken with paper towel to dry
  • Salt and pepper the meat
  • Brown all sides in a heavy skillet with olive oil (do them in batches if space is tight!) then set them aside,
  • Add a cup of chopped onions, 1 bay leaf, 1 ½ tsp chopped fresh rosemary (or dried if that’s what you have – ½ tsp), 1 tsp minced sage leaves (or ½ tsp dry)
  • Cook until onions are brown (about 5 minutes)
  • Add finely chopped garlic (one clove) and cook until fragrant (about 30 seconds)
  • Put the chicken back in the skillet and add ½ cup dry red or white wine and cook over medium high until the wine is evaporated – scrape the bottom to get all the brown bits as it cooks.
  • Add an 8 oz can of good tomatoes (crushed or break up whole ones), juice and all
  • Add mushrooms (8 oz sliced) (only if you like them!) at this point and cook,covered for 10 minutes.
  • Uncover and boil the pan juices on high to slightly thicken it up.
  • Serve over your favourite pasta. (spaghetti was our favourite, but it really doesn’t matter. If you don’t have pasta a great alternative is mashed potatoes.
